Weekend Cooking is a chance to share the food love with everyone and is organised by Beth Fish Reads. On Saturday mornings, write a post about food, perhaps a cookbook review or maybe just some favorite food-related quotes.
I am constantly on a diet!
Is it just me or is there an army of us?
Weight Watchers and I have been friends for quite a few years now, although we did have a bit of a falling out over Christmas and I am trying to make amends.
I thought I would share one of my culinary
The following recipe was featured in February edition of the Weight Watchers magazine, which I buy religiously every month!
Oat and Fruit Slices
Under the new ProPoints system this equals 4 points per slice, after being cut into 8 slices.
Ingredients
75g (2 1/2 oz) low fat spread
50g (1 3/4oz) soft light brown sugar
1tbsp golden syrup
150g (5 1/2oz) oats
25g (1oz) dried cranberries, chopped
25g (1oz) dried apricots, chopped
15g (1/2oz) pumpkin seeds
Method
1) In a saucepan, heat the low fat spread, sugar and syrup together. Remove from the heat and fold through the oats, dried fruit and pumpkin seeds.
2) Preheat the oven to gas mark 4/180C. Line a round 20cm (8inch) tin with greaseproof paper and then tip in the oat mixture, pushing it down tightly in the tin.
3) Bake for 15 minutes in the oven. Once cooked, remove from the tin,and leave to cool completely before cutting into 8 wedges. Store in an airtight tin for up to 3 days.
Unfortunately, I decided to cut mine before it had cooled, so it ended up breaking into chunks, but it was still tasty!

Maybe the calories don't count if you don't manage to cut them into slices?! Looks v tasty!
ReplyDeleteLooks delicious.
ReplyDeleteI have made chocolate ganache so far this weekend. Not good when on Slimming World. Luckily I used really high percent chocolate so it means one spoonful is enough (well maybe two)
That looks pretty tasty, perhaps I will try it :)
ReplyDeleteI have a long-time relationship with WW as well *sigh*. This sounds delicious
ReplyDeleteOooh looks tasty Vivienne - will have to work out how many Syns for me on SW :P Yep - I'm still in your army!
ReplyDeleteThat looks yummy! The addition of pumpkin seeds intrigues me.
ReplyDeleteOh gosh this sounds good. I doubt this would last very long in my house. I have friends who do WW and they seem pretty happy with it.
ReplyDeleteIt's time for me to renew my relationship with Weight Watchers... and this sounds like a great place to begin! WW has so many wonderful recipes and quite a few of them are part of my repertoire.
ReplyDeleteYummo! Looks great! I've done so well with my weight. I'm almost at my goal now. I love WW recipes. They have so many really good ones.
ReplyDeleteI laughed right out loud at what you wrote, and read it to my husband. Witty! I, too had a important relationship with WW. It was fantastic. I lost 25 pounds nine years ago, but I managed to find them again plus a few more. I can't make up my mind if I want to lose them again as much as I want to make buttery desserts.
ReplyDeleteUh-oh, you mentioned the 'd' word. I'm one of those on-off dieters too. Mostly because when I'm not on a diet, I have this tendency to eat a ton of chocolate, drink a lot of wine, and do very little exercise. Naughty me.
ReplyDeleteI relate to that 'giving in to snacks' thing too. The only diet that works for me is the new version of Atkins, because it kills cravings spectacularly. That sounds like a lie, but it's true!
Unfortunately, Weight Watchers or any other kind of calorie-counting system doesn't work for me (but I've heard wonderful stories from people who had really good experiences, so it is really a matter of preference), I'm an OCD kind of girl, and would probably do nothing else but check my food intake all day :s
ReplyDeleteThe recipe looks very tasty and healthy at the same time, though!
I'm not on a diet, but I think I need to be!
ReplyDeleteOh, that does look delicious. I may just have to write that recipe down, thanks :)
I've never done the diet thing but I just hate it when my friends are on one! I always feel so guilty when I eat what I want and they're counting calories.
ReplyDeleteLooks yummy!
ReplyDeleteThis looks really good! Isn't this a fun meme? :)
ReplyDeleteThis looks and sounds yummy. I dislike the new WW program that took effect in November. I liked the old plan better, even though fruits and veggies are free now, I feel like I can actually eat LESS of what I like because the points are so much more.
ReplyDeleteFor example, the yogurt I love is now points instead of 3 (old plan). I am not losing like I did on the other plan.
It looks like a big granola bar cookie! Yum. I love pumpkin seeds and might give this a try. Good luck with Weight Watchers.
ReplyDeleteIt looks really really good!
ReplyDeleteSounds tasty!
ReplyDeleteOhmygosh, they look *so* good. I'm keeping a note of that receipe!
ReplyDeleteI know a lot of people who've had tons of success and swear by Weight Watchers...not just as a diet plan but also a realistic plan for eating everyday. This recipe sounds yummy whether or not a person is on Weight Watchers :)
ReplyDeleteThought I would browse while I am waiting for some ganache to set up, then I can spread it over the buckeye cupcakes that I found the recipe for last week. Never tried WW but my grandmother swears by it.
ReplyDeleteI just eat anything and everything in sight! That looks delicious and I want a few slices!
